The Franz Haas KTU wafer sheet conditioning tunnel moistens wafer sheets to prepare them for molding or enrobing with chocolate. This prevents the chocolate coating from cracking or chipping.
The humid air is produced by an external air conditioner. Wafer sheets move through the conditioning tunnel for about 20 minutes to make sure that they are well and evenly moistened. This ensures that the wafers do not withdraw moisture from the chocolate coating, which would cause it to crack.
